Yam Puree

(6 servings)

2 large or 3 medium yams

3 Tbsp butter, melted

1 Tbsp dark rum

1/2 Tbsp lemon juice

2 Tbsp heavy cream

1/2 tsp orange zest, grated

Bake the yams in 325° F oven for an hour, or until soft. Then cut them in halves, lengthwise, and scoop out the pulp. Put the pulp, along with the rest of the ingredients, into a processor and puree until smooth. Serve warm.

Note: the amount of all ingredients is relative to the size of the yams, and should be adjusted accordingly.
